Chicken a la King Recipe

One of my fav chicken recipe is the 'Chicken a la King Recipe'

Ingredients
3 tablespoons butter
1 cup fresh sliced mushrooms
1 red bell pepper, seeded and chopped
1/4 cup all purpose flour
Salt and pepper to taste
2 cups heavy cream or milk
1 1/2 cups chicken broth
3 cups chicken, cooked and diced
1 cup sweet peas, frozen

Directions
  1. Melt butter in a saucepan over medium heat. Add mushrooms and red bell pepper; cook for 5 minutes or until mushrooms are soft.

  2. Blend in flour, salt, and pepper. Continue stirring and cooking until smooth and bubbly.

  3. Gradually add cream and chicken broth, stirring constantly. Cook for 10 minutes, stirring frequently.

    Note: If you would like a thicker sauce, blend 2 tablespoons of cornstarch with 1/4 cup cold water; add to sauce, a little at a time, until desired thickness is reached.

  4. Cook for a few more minutes. Add chicken and peas; heat through.

Pumpkin Bread

My favorite Pumpkin Bread recipe is the one made of canned pumpkins. Very moist, delicious and easy.

Ingredients
2 cup all-purpose flour
1 cup packed brown sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger or ground cloves
1 cup canned pumpkin
1/2 cup milk
2 medium eggs
1/2 cup shortening
1/2 cup chopped walnuts
1/2 cup raisins


Directions

  1. Grease the bottom and 1/2 inch up the sides of a 9 x 5 x 3 inch loaf pan; set aside.

  2. In a large mixing bowl combine 1 cup flour, the brown sugar, baking powder, cinnamon, salt, baking soda, nutmeg, and ginger or cloves.

  3. Add pumpkin, milk, eggs, and shortening. Beat with an electric mixer on low speed till blended. Beat on medium to high speed for 2 minutes.

  4. Add the remaining 1 cup flour; beat till blended. Fold in the walnuts and raisins.

  5. Spoon batter into prepared pan, bake in a 350 degree F oven for 60 to 65 minutes or till a wooden toothpick inserted near the center comes out clean.

  6. Cool in pan on a wire rack for 10 minutes. Remove loaf from pan. Cool completely on a wire rack. Wrap and store overnight.
